Ok ok, I know that I always say that my preserves are sweetened with maple syrup or honey... but this one breaks the rule because it is so good that I've never debated trying to change it.
It's still really simple, though- pears, coconut sugar, and cardamom (coconut sugar weirds some people out, but really it just has the flavor profile of dark brown sugar while being a 'cleaner' ingredient with a lower glycemic index). The earthiness of the coconut sugar paired with the cardamom take the pears in a delightfully deep direction- pretty much the opposite of my bright and tart Pear Cranberry Jam! The texture is almost like a fruit butter, but there's still some pieces of pear that I leave un-smushed so that you have a spreadable yet stack- on- a- crackerable jam.
